Looking in the freezer, I announced I had no idea what to do with the leftover ground beef. LV asked if I could turn it into meatloaf. I vaguely remembered the last time I'd made it. There was grainy bread and perhaps too much seasoning. And something else... I came to this site, hoping to find an answer. November 1? I went that long between batches of meatloaf? That seems almost crazy. It's such a wintertime food.

Meatloaf & Salad
This is a picture of meatloaf on salad. I didn't have any potatoes or whatnot to serve with this besides salad. I didn't put LV's meatloaf on his salad. He wouldn't have liked that. While we were eating, we had the same thought: Good thing Scrappy's not here for this. We thought the extra seasoning was great, but she probably wouldn't have liked any of it. Especially considering I used 12 grain wheat bread for the loaf. That created an interesting texture.

"Why can't you believe that?"
"I don't remember it."
"Yeah, you made meatloaf. And it was really good," LV says. He hasn't even looked at the photo. "You left something out. Onions! You left out the onions and it was really good!"

Pasta with Leftovers
I was swamped this weekend, so I didn't leave the computer. LV took over making dinner for the night. I thought the fact that Scrappy was sitting down to a plate of carrots merited a photo alone. She had fresh pasta with leftover oven-fried pork while LV had fresh pasta with leftover meatloaf. And lots of carrots all around.

Meatloaf (Part 2)
This time the meatloaf tasted better to me. I forgot to throw in all the Italian seasonings (they got sprinkled on top) and I used only beef. It was still not as dry as what I think meatloaf should taste (which is really a good thing), but I enjoyed it. And everyone ate carrots. Success!
That blob on the side? Leftover mashed potatoes from Chicken Delicious. They looked really good before I microwaved them. Then they turned to soup.

Meatloaf
I was thinking of titling this post "mmmmMeatloaf," but I really wasn't that crazy about it. I think I'm programmed to want my meatloaf with just ground beef and on the dry side. Like it's not done right until it NEEDS ketchup on it.
As a way to use up the left over ground veal and ground beef from an earlier (and successful though not photographed) attempt at Swedish meatballs, I decided to make some meatloaf. I think the veal helped it taste juicy, and I was repulsed. Scrappy and LV, however, dogged it.
All I have to show are the three leftover slices...
