At Thanksgiving time, I make pumpkin bread. And then use the leftover batter for muffins, more muffins, and (this year) squares (in the brownie tray). Basically, anything I can pour the batter into.

Grilled Chicken, Muffins and Salad
I wanted something summery for dinner even if the weather was anything but warm and sunny. Corn muffins and a mix of tomatoes, corn and avocados seemed to be the way to go. It worked for LV and Scrappy.

I seem to have forgotten something...
Thursday night we went shopping and I saw a bottle of dressing I wanted to try. We never have dressing in the house, but raspberry vinaigrette sounded good. At lunch I decided to try it with all the green peppers, mushrooms, and cucumbers I had on hand. I diced them up, but thought they looked kind of sad. So I added the little bit of pasta left from earlier in the week.
I seem to have forgotten an ingredient in these muffins... I was so excited to make muffins with big frozen blueberries, and then I forgot to add the baking powder. They look like bricks, but they taste okay. A little solid. Like a weird scone.
Luckily the rest of dinner was better. (And the muffins did get eaten.) I thought this might be an overload of fresh vegetables for one day, but it actually didn't taste that way. (There is a lot of turkey hidden in there.) Yay for me...

Blueberry Muffins, Grilled Chicken, and Green Beans
This is one of those dinners that Scrappy can always finish--plain chicken with BBQ sauce for dipping, blueberry muffins, and a vegetable she's eaten before. Well, once she figures out that they are not raisin muffins, then she can finish it.
I completely forgot about adding oatmeal to the mix and had no idea that one carton of blueberries wouldn't be nearly enough for the recipe. LV said the muffins reminded him of the scene from Casino where Robert De Niro flips because the berries are not evenly distributed. Not that any of us were angered by the lack of balance in the distribution of the berries. Just saying...

Strawberries! Part 1
The problem with buying a quart of strawberries at the local grocery store is that not could there be one heinously mushy and moldy berry hidden in the center of the package, but also that you have to use them all almost immediately so that they don't become heinously mushy and moldy.
We had already finished the chocolate chip muffins, so I made strawberry muffins. Then I finished off four of them. Almost immediately.

Chocolate Chip Oatmeal Muffins
It was a Saturday morning wake and bake. With muffins, though.
I was so excited to find I could make muffins with the one egg left in our fridge. Only the one egg that was left was stuff to the carton. My mom taught me to check the eggs I buy... I guess I should have been more neurotic? I gave the new dozen a quick glance before getting in line and racing back to my bowl of dry ingredients.

Corn Muffins Make It Better
Nothing makes me feel less like cooking than standing around in cold all day, photographing the marathon. So, we had the "I don't feel like trying" Sunday dinner of chicken, broccoli and Jiffy mix corn muffins.
