I had been meaning to make this chunk of steak for quite some time. It came out of the freezer on maybe Monday or even Sunday, but didn't go into the oven until today. We didn't get sick. Success!

Bland Steak Dinner


I made this steak on... Wednesday? Yeah. It's been a busy week. I made steak Wednesday, but LV called to ask if I wanted him to bring anything home for dinner. So I told him to bring something to go with the steak—two gigantic bone-in cuts that were slowly baking in the oven. He brought fried rice and egg rolls. Then the next day we had pizza. Then today we had the steak again. (I wanted to make chicken pot pie, but with only $5 on me, I couldn't really get all the vegetables and chicken broth. Tomorrow. I'll make chicken pot pie tomorrow.) Again, I didn't feel like putting much effort into the sides, so here we have plain egg noodles with plain frozen green beans with plain (but really tasty (I took my time comparing cuts this week)) steak. Borrrrring.

Leftover Steak


I took the steak out of the freezer several days ago with bigger plans than simply making plain penne and frozen green beans. But here we are, plain penne and frozen green beans with some really good leftover steak. Mmm...

Good Steak


When I picked up the London broil, I wasn't thinking, Mmm, this'll be good. I was looking more at the size. But oh my god it was so good compared to the beef we've been eating lately. So good. The biscuits, not so much. I thought I had left them in there long enough, but it wasn't the same as the last really good batch.

Fajitas


Looking in the fridge and cabinets, I didn't have a whole lot to work with. A couple green peppers and a few tortillas. So, the baby and I set out to get some fajita seasoning. The cashier looked at me like I was kind of crazy. "This is it?" Yeah, that's dinner. With a lot of cookies after.

Green Squash!


I know you're supposed to buy in-season locally-grown fruits and vegetables, but I was excited to see something in the produce section that didn't look so yucky. I don't know where it came from or how big a carbon footprint it cost, but that green squash was tasty.

Hurray for Hot Meals


The baby is starting to let me eat dinner with everyone else. But not really. Eating doesn't really describe the way LV and I shovel food into our mouths in the hopes that one of us will finish before there's a meltdown.

Roasted


Big cheap steaks at the grocery store mean a long run in the oven at a low temperature. This cut was a little too thin and came out a bit blackened. Luckily, it didn't taste charred.

Suddenly Steak


The other box of pasta salad wasn't quite as good. A little too slimy. But the seasonings went well with the steak, which had been in the oven for a long time at a low temperature.

Frenh Dip Sandwiches


Earlier in the week, I grilled a steak before it turned bad. Then I had to figure out what to do with dried leftover steak. I decided to get a can of beef broth and make some sandwiches. They went over well. Even with Scrappy.

Stir-Fry


The green peppers at the grocery store looked really good this week, so I bought a bunch. I'm sure there are more creative things that could be done with green peppers, but the little pre-cut pieces of steak looked good, hence stir-fry. Well, they looked good before this picture. Here they're kind of colorless and sad. Over yellow rice, though, it wasn't as bland as it looks.

Steak and Spinach


I decided I should be eating more dark leafy greens. And what's darker and leafier than fresh spinach? I just didn't realize how boring a big bag of spinach could taste. So, this is me trying to dump some of my spinach on LV. He has some pasta, too. (The rest of the pasta became his lunch for the week.)



I stuck with lots of boring spinach. The steak helped.

Macaroni & Leftovers


First we had leftover kiwis and leftover strawberries over pancakes. (It's been a really long time since we've made pancakes.)



Then I made macaroni & cheese to go with all the leftover meats we had in the fridge--a package of hotdogs that weren't opened during the week Scrappy had off of school, leftover steak, and leftover pork. LV had steak and hotdogs. It had to be better than my pork.

Extra Crispy


LV once raved about some Shake-n-Bake potato wedges he had many years ago, so any time we have a bag of potatoes in the house I feel compelled to make something like that. Usually I put the wedges in the oven and wonder why they still taste raw 30 minutes later. This time, I thought I should give them more than 30 minutes--more like 45. What came out were burnt and dried up husks that vaguely tasted like potatoes. That big glob of ketchup was to help me avoid throwing them all in the garbage. LV claimed the potato wedges tasted good. I think the steak was much better.
