Chicken Legs


"Dinner is deeeelicious."

Did I hear her right? Do I need to have Scrappy's tastebuds checked? This is 99 cent salad because it's set to expire any second. This is super cheap chicken that is probably also about to expire. This is store brand macaroni that I overcooked. It's all eww. But okay. Something other than pizza gets a thumbs up from the Scrappers...

Good Steak


When I picked up the London broil, I wasn't thinking, Mmm, this'll be good. I was looking more at the size. But oh my god it was so good compared to the beef we've been eating lately. So good. The biscuits, not so much. I thought I had left them in there long enough, but it wasn't the same as the last really good batch.

Meatloaf & Salad


This is a picture of meatloaf on salad. I didn't have any potatoes or whatnot to serve with this besides salad. I didn't put LV's meatloaf on his salad. He wouldn't have liked that. While we were eating, we had the same thought: Good thing Scrappy's not here for this. We thought the extra seasoning was great, but she probably wouldn't have liked any of it. Especially considering I used 12 grain wheat bread for the loaf. That created an interesting texture.

Grilled Salmon


The grocery store had really big, fresh-looking cuts of salmon. I decided they would be good to grill up. The Foreman wasn't so cooperative, though. I think the cuts were too thick. And then the whole apartment reeked of fish. At least the salmon tasted good.

Grilled Pork Salad


This was one of those days where I started pulling everything out of the fridge that needed to be used--spinach, apples, onions, pork--and started trying to mix it up in a way that would taste like I meant to put them all together. I used cider vinegar, cayenne pepper, and I don't remember what else. It had a sort of sweet and hot kick.

Patty Melt and Burgers


There weren't enough buns leftover by the time I made burgers, so mine became a patty melt. This time I flattened it out a lot to be sure I wouldn't be eating mostly two pieces of toast. That seemed to work. Can you tell I hadn't met my quota of vegetables for the day before dinner?

Berries, Yogurt, and Chicken


Before the raspberries could go bad, I topped a cup of vanilla yogurt with them. Not the most impressive amount of work, but I thought it looked good.



We hadn't had chicken strips in quite a while, so here I mixed up a batch and served them over salad. (I shouldn't be the only one trying to reach 5 servings a day.)

I seem to have forgotten something...


Thursday night we went shopping and I saw a bottle of dressing I wanted to try. We never have dressing in the house, but raspberry vinaigrette sounded good. At lunch I decided to try it with all the green peppers, mushrooms, and cucumbers I had on hand. I diced them up, but thought they looked kind of sad. So I added the little bit of pasta left from earlier in the week.



I seem to have forgotten an ingredient in these muffins... I was so excited to make muffins with big frozen blueberries, and then I forgot to add the baking powder. They look like bricks, but they taste okay. A little solid. Like a weird scone.



Luckily the rest of dinner was better. (And the muffins did get eaten.) I thought this might be an overload of fresh vegetables for one day, but it actually didn't taste that way. (There is a lot of turkey hidden in there.) Yay for me...

Leftovers


LV didn't believe me every time I make chicken, there is one obligatory leftover piece. It's the leftover leftover--after I've eaten some of what's left and don't feel like eating it for the third time. This is leftover breaded chicken with baby spinach.

Trying to Offset All the Candy


LV and I had hit Target the night before and bought a bag of candy bars. In general, nothing we'd been eating all week was very healthy, so, when I went to the grocery store to look for something to make for dinner, I decided to buy a bunch of vegetables for salad. While we heard one trick-or-treater complain several times that he needed real food, we were okay and out for much longer than our first year in this neighborhood.

Yum Salad in a Bag


None of the salad at the store looked good, so I bought a bag of ready-to-serve "more creative" salad. "More creative" because it includes toasted almonds and dried cranberries and some vinaigrette. (LV has forgotten more things than most people will ever know, but he dug out the correct spelling of vinaigrette. That one "stood" in his brain.) I added the strawberries and turkey. Done.


I almost forgot! I made corn muffins to go with this. That made it see more filling.

Forgotten Salad


This is spring mix with turkey, tomatoes, red onions, walnuts, and maybe some other stuff I bought and at the last minute remembered I needed to turn into a salad. (It hasn't been a good couple weeks for produce in our kitchen. I keep forgetting to use it...)

We had a lot of pasta sauce leftover from the night before, so I made a box of pasta, ate a little for lunch with the leftover sauce, and used the rest for a pasta salad. I forgot to take a picture of the salad before I wrapped it up, though.

Kind of Yum Salad and Corn Cake


I changed the header on this blog to say that I serve dinner with no complaints: I don't complain, my family doesn't complain. Two days later, I get complaints.


"Daddy... I don't want to eat the raspberries."


Scrappy was waiting for her instant corn cake to rise in the oven. We hadn't even sat down to eat. And she was already protesting... the raspberries?


The salad had started to turn. I was meticulously picking out good pieces from bad pieces in the spring mix, and she's protesting... raspberries.


This had to be because I changed the header.

Salad for Everyone


Why keep making the same salad by myself? This time LV and Scrappy pitched in, cutting strawberries and tomatoes (a new addition).
